SEA SALT CARAMEL STORY

CHOCOLATE MADE BY PEOPLE FOR PEOPLE

Nicolette always gives our caramel her special loving touch. We make it the traditional way by caramelizing our own sugar to perfection - but the secret to perfect caramel is all about the correct temperature used and amount of agitation the mixture is given. 


Making a small batch is a very time consuming process because we measure the mixture continually, to establish how far the caramel is cooked, but with Nicolette’s trained eye she knows how far the caramel is just by looking at how big the bubbles are and how fast they pop!

We test each batch before decanting by setting a small amount. This allows us to evaluate whether we have the perfect caramel flavour, color and snap. 


We love coffee beans from this area because they have a wonderfully intense flavor profile, which is ideal for our chocolate, Fari our Barista knows his coffee, and ensures we achieve the optimum roast to bring out these complex and intense flavour profiles.


We use only our own real whole bean grind for our chocolate, adding bits of coarse grind for the perfect deep aromatic, dark chocolate experience. Smaller really is more satisfying

We aim for a crunchy, buttery caramel with a light caramel color. Finally we add just the right amount of coarse sea salt to achieve our famous sea salt and caramel rhapsody everyone loves.
